Using S-o4 in Woodforde's Great Eastern Ale - any concerns?

Using S-o4 in Woodforde's Great Eastern Ale - any concerns?

Wondered if there would be any issues with using S-04 in my upcoming batch of Woodfrode's Eastern Ale.

I went on a brewery tour of Fullers in Chiswick a while ago and they said that they, and loads of other breweries, keep some backup yeast in special holding vaults. There are companies who offer this storage as a service. The point being that different breweries have 'bred' their yeast to suit their own beer and the yeast is a big component of the flavour. (And I think that's why I don't like *anything* in the Shepherd Neame range).

So, if this is true, shouldn't we use the yeast that comes with the kit?

Oh yes. Now I look at it my Woodforde's kit says 'using the brewery's own choice of hops and malt'. No mention of yeast.

So, is S04 the yeast of choice for the experienced home brewer?

OK, and can any harm come from putting too much yeast in (within reason)?
