Old Homewrecker Blues

Stuck at 1.024 from 1.040 (actually got the O.G. spot on!).

Std kit, no extras (except 1/2 tsp yeast vit and mineral water instead of treated tapwater). Supplied Gervin yeast was DaaB rehydrated before pitching. Two days at 1.024 before further rousing attempted. Nothing.

Enzyme now pitched and krausen is back. Am pleased it's going again but am not happy about the damage the enzyme may do to my final brew.

Question is, has anyone else experienced yeast issues with this brew or is it something I'm doing?

Brewcupboard ranges 18 to 22 deg c; everything is vwe sanitised and well rinsed.

What damage can enzymes do? I aded some to my Admirals reserve and it turned out good. FG was around 1004.

Can make the beer thinner than intended, and with less residual sweetness.

Okay - kit says FG sh be in the region of 1.009 and everything has settled after enzyme at 1.005.

Hopefully that'll mean no too much thinning of taste but, as it's my very first milestone kit, I wouldn't know if it was way off!

Had a taste whilst bottling - tastes fresh and heavy; am very happy

Opened one of these last night and was absolutely staggered. Really crisp clean ale taste with hints of citrus! Was all I could do to stop at one.

All that worry for nowt. When I get round to their IPA I'll just be more systematic and fastidious than I was with the'Wrecker!
