I'm considering (by the time you read this, I may already have!) replacing the kit yeast (which needs rehydration, from the kettle I get water with limescale though) with the Safale S-04, a sachet of which I have spare. Any reasons not to do this? Primarily, I'd rather pitch the S04 dry into the wort per instructions than use the yeast with limescale in it.
Thoughts?

I'd rehydrate the yeast and make a starter as per the instructions on the link at the top of this page, if your concerned about the water, use bottled but I dont think it will matter too much, with the yeast starter you will be bubbling with in an hour and lessen the chance of infection. Nice kit, I did one a few weeks back.

I'm just about to S04 it....Nasty can opener piece of rubbish. I have a skint finger, and very unclean edges on the cans. I hope I haven't contaminated the beer....
Had to use a "lever"- the back end of the opener. I ran boiling water over it as my sanitation solution was doing its work in the drain....hope I haven't killed it.
And now I realise I didn't stir it - there was a layer of unmixed thick gloopy wort down the bottom. I swirled the Fermentation bucket around a few times, and it seems to have been incorporated - I hope.
I shouldn't be allowed near beer!

You could always boil your rehydration water in the microwave and let it cool before adding the yeast but I don't think that your kettle water will have a negative effect.
Pitching dry yeast on to the wort is fine but rehydration will give the cells a head start and should help to kick off fermentation quicker than dry pitching.
Which ever yeast you choose, Brupaks Fixby kit yeast or Safale04, I'd rehydrate.

So long as the water is at room temperature, it will be fine. Remember, if the limescale is on your kettle element, it is not in the water.
For rehydrating a bit of yeast, i wouldn't worry too much.
I have made countless kits, and never had an infection. If you're really worried you can spray a can down with iodine and soak the can opener in it too. I may or may not do this when i make up kits.

Hi guys, another mindless question from the newb. I'm a week into this Fixby Gold kit, which seems to have stopped at 1.016, I got that reading today and yesterday. I was thinking about racking to secondary this afternoon, let it finish off in there for another week before bottling next week. Does this make sense?
