Finished FV in 48 hours

Hi

This is my second Milestone kit, and just as the first one it seems to have finished the FV in just 48 hours, it's still a couple of points of from the instruction 1014 compaired to 1009.

Is that normal or not.

Lot of the good quality yeasts will ferment out in that sort of time. Safale S-04 is nice and fast.

Leave it in there for the 7-10 days as per instructions anyway. :)

Edit: should probably tell you why, eh?

Leaving the beer in there for the full timescale gives the yeast time to clean up those last few points of gravity, clean up its own waste byproducts, and generally finish off the flavour of the beer. You'll also get a bit more sedimentation.
