Sulphur smells

Just a quick question for the knowledgeable crowd :lol:
I've seen a few posts saying this is OK from the fermentation and not to worry, so I'm not.
But I would be interested to know what causes it if anyone does know that is?
Or failing that best guesses :wink:

Does it have something to do with the campden added to the water?
Perhaps my water doesnt need it?

Its brew no:3 and first time for this and only a very minor waft.

It's the yeast producing sulphur compounds as a byproduct of cold fermentation. I presume you're using a lager yeast at reasonably low temperatures?

The smell would get a bit stronger the colder you get. But better those compounds are in the air than in your beer, eh?

AHHH

The beauty of the Sulphur Smell, Im actally egging the weather to get colder - I actually like the warm weather ( more girls + less clothes ) to get some lager on the go.

My last attempt in march was not very good, it was too warm.

In the prev winter I brewed some Coopers with S23 and it was perfect - took over 3 1/2 weeks to brew out.

Actually I'm not doing a larger its a Tom caxton Best and trying Safeal 04 for the first time after so much praise on this site! Also fermenting at about 20 still, probably fluctuating from 16 to 22 ish

Does that mean I should worry?

Tested today after 5 days gone from 1.050 too 1.020 which I think is OK, tastes lighter than expected and the bitterness is quite strong but I expect that will mellow.

Any other ideas about the sulphur?
