Okay, this could be a bit of a daft one! Following advice on this forum I've taken to replacing the kit supplied yeast with a seperate one (S-04 now I have found a local supplier). I have kept the kit yeasts in case I needed a back up, and have stored these in the freezer. Looking back over previous posts I see that they seem to refer to storing yeast in the fridge and wonder if i've now killed off my spare yeasts. So, will they be okay? If so should I move them to the fridge, and how long would they take to thaw if they are okay to keep in the freezer?

I store yeast in the fridge, but I'm sure I've read someone on here keeps theirs in the freezer - that only works well for dried yeast, though. Live yeast slurry is (apparently) very difficult to freeze without killing it off.
You'll probably be OK, but why bother using yeast that you've already decided is crap and replaced it with a better one?

I guess I keep it because I don't like to waste what I've had to buy; I also kept them as a back up 'just in case', though I suspect the more sensible thing to do would be to get some spare S-04 packets!
