Have I ruined my brew

Post by johnnyk » Fri Nov 21, 2008 7:17 pm

Hi guys,

I have just tried the first of my new brew (morgans blue mountain) 2 weeks after I bottled it. As soon as I poured it had a very storng bitter smell and even more when I tasted it, not drinkable

I brew in my garage and use a brew belt and the first 3 brews have been great but this time by my own fault I did not check the temp as much and the temp has also been going up and down a lot in the garage. When I did check the brew the temp was higher (24) than I usually brew at (20) and it was higher for a few days at least due to me being lazy and not checking enough. I also used BKE but i've used that before and can't think of nothing else I did differently than before.

I was looking forward to this but looks like it'll be going down the sink #-o

Don't panic - it's still early days.

High fermentation temperatures can give a harsh bitterness, but this will reduce with time (4-6 weeks). It may never by a wonderful pint, but it should be drinkable.

Thanks Jim I hope it's that anyway and I've got enough to keep me going so I will leave it for a while and hope for the best .... [-o<

Yeah if it's in bottles nothing to lose by leaving them for a few months. I have had a similar result in the past but because I had kegged it I didn't have the pateince - or the spare keg - to wait so it had to go.

Anyway I am sure the next one will make up for it :D
