Cheers for the advice. The keg didn't come with the chrome co2 connection on it, just the plastic/rubber seal, but I'm such a beginner that I didn't know that the pressure could be released by simply squeezing the rubber thing on top. I've done this now, and feel a lot happier!!! Although the keg's in the garage, I still didn't want my Christmas brew all over the roof.

I'm not using co2 canisters for my brewing, but this brew seems to be far more pressurised than my first one, although I've not consciously done much different. The only thing I've done, on advice from my local homebrew shop, is to dissolve the sugar in half a pint of boiling water before adding it to the keg from the fermentation bucket. And also storing it in the garage in what is now colder weather. Would these things make a difference to the pressure? Also another quick question - is it too cold to be storing it in the garage during secondary fermentation, and if so what is the best temperature for this part of the process? The instructions say to store it in a 'cold' place, but I've also read that this can inhibit fermentation.

I personally wouldn't be conditioning real ale in a temperature below 10C which is the temperature that pub cellars aim to achieve.

Fellow Wulfruninan here, made a decision about the keg yet? I certainly have some drilled caps, and may just be able to sort an S30 valve, please PM me if interested.
