giving this a go at the moment....anythoughts on adding cloves or cinnammon sticks to the brew for a different taste next time? i like spicy beers? anythoughts? and if its a yes, quantity?

To be honest I wouldn't bother, if you are keen to experiment buy a cheapo Tom caxton or the like and try it out on that, dont waste a pricey kit.

been thinking this myself with a cheapo geordie bitter. how would you add the chilli's? do you "dry Hop" during the last couple of days of primary, or can you boil them in water and add it from the start? any suggestions all taken.

I don't really know, I guess you could boil them up in a bit of wort, hopefully some oils would be extracted, then maybe lob them in at fermenting time along with some chopped chilli? .....will go with that, do it with a cheapy kit....HOWEVER....today i made a "from scratch"
Ginger beer, which i did try and make "spicy"....heres what i did, see what ya think
boiled 2kg sugar,
5L water, and...
2 Cinnamon sticks,
8 cloves
1 tsp red chilli flakes
1kg fresh ginger root (all blitzed in a processer)
simmered for an hour,
left it to cool
sieved it through a bag
put in fermenting bin, topped up to 20L with cold water,
sprinkled on a Champagne yeast,
let stand for 15 mins,
stirred it, and is now gonna sit fermentin, and will hopefully bottle in 4-6 days.
will let you know how it goes.

Id suggest something like a brewferm abbey, its already half way to being a christmas beer, only without the spice. As for price, its a half decent kit and goes around a tenner so you wont loose much if it goes arse over tit.
As for spices, id definately plump for cinnamon and clove. What else is there that goes? think gluhwien. The longer maturation period for the brewferm kits will allow the spices to mellow into the drink and give a lovely warming beer.
Anchor Brewery (of 'Liberty' and 'Steam' fame) do the spiced beer brilliantly with their xmas ale
