2 Spray Malt Questions

Hopped Spray Malt:
I've read on some kit instructions that 'Hopped Spray Malt' is used to add to a kit to keep the bitterness balanced.
What is the deal here as everything I've read on here just says replace sugar with Spray malt, not Hopped Spray Malt? (is an experiment in order here?)

Wheat Spray Malt added to Coopers Stout:
I've read what various ingredients do to the properties of beer, and Wheat is one of the things that aids head retention, so could Wheat Spray Malt be added to a stout to give something similar effect for a bottled coopers stout?

I'll probably buy a bag or two of Hopped / Wheat and have a bit of an experiment.
*I've just had a bit of a read up on malto dextrin, so is this something that yeast has an easy time with or does it leave a residual sweetness?

OK, so how does this compare to Lactose? Are we still talking head retention with the Malto Dextrose?
