My Honey Beer

I made an adapted kit using a Burton Bridge Summer Ale kit and honey (and a little brewing sugar). It was fermenting a good ten days and I thought the gravity was stable before I bottled. I used only the recommended amount of sugar when bottling. It's been in the bottle just over four weeks now. It definitely tastes of honey but it is very very lively. In fact I'm surprised that I haven't had any explosions (not yet anyway). It doesn't froth over when a bottle is opened but it goes immediately cloudy because all the bubbles seem to come from underneath the yeast at the bottom of the bottle and the beer quickly looks like one of those snowy London scene toys. :?

Anyone else had anything like this? Is it common when honey is used in beer making? or is it something else?

Maybe all the sugars/honey didn't ferment out due to temperature?

Anyway, same thing happened to me and this is how I got around the problem. Open the bottle and within the same second (i.e, immediately!), begin pouring into your glass. Give it a go. :D

I must admit I've used honey for priming and it's very lively coming out. I'd advocate and oversize pint pot and a rapid pour at 45 degrees. Floyd - I see you're conditioning a Honey Zest Ale, sounds good, what's in it?
