Will a Barley Wine kit brew up to 12%

Post by GabrielKnight » Sat Apr 11, 2009 8:56 am

I've had some success using Young's Barley Wine kit usually brewing up to 10%, and have now prepared a new batch but only added water up to a level where the hydrometer gives a potential alcohol reading of 12%. Do you think the yeast will manage this or am I aiming too high?

Also, as I'm using two kits, should I just add one packet of yeast, two, or somewhere in between?

if you've got enough concentration of sugars to give that higher potential alocohol level and that size of worth then i'd guess you'll have a better chance of success if you use both.

I would not use the kit yeast. But if you don't have any other yeast chuck in both packets.

Thanks Kev
I'm not that bad...i don't think? :|

I reckon both packets should be able to cope, my beers that go up to around 10% normally cope with one packet, but always best to play it on the safe side.
