Coopers Stout more Stouty???

Post by gullarm » Sun Apr 12, 2009 12:54 pm

Over the past year or so I have brewed a few of the Coopers Stout with 1Kg of brew enhancer instead of the usual sugar.

I have bottled and also kegged a few and they taste exactly the same every time. The keg is particularly good as I have a Dalex tap attached and it comes out with a nice Guinness type head.

Now the taste is pretty good but after downing a few and then popping in to my local for a pint of Guinness I realise how much better Guinness is compared to mine.

Is there anyway of improving the coopers stout.

My personal opinion is that Coopers Stout + 1kg Dark Spray Malt is much better than Guinness.

I'm having a Coopers Stout experiment at the moment to try and alter things a bit, maybe I'm going too far and it should have been half the amount of bittering hops... who knows! ;)

Maybe use all spraymalt instead of BKE (which 50/50 spraymalt and brewers sugar).

After that you're looking at adding things like extra hops and grains. If you're going to do that you might as well forget the kits and brew either extract or AG IMHO.

And don't forget that Guinness is pressurised with Nitrogen (or is it a Nitrogen/CO2 mix?) which gives a smoother feel so you may need to go over to cornies and Nitrogen.
Best wishes

I agree with pdtnc, I use 1kg of dark dsm and it's much nicer than guinness, my latest has 100g of wheat dsm added to see if it helps with head retention, I kegged it a few days ago, I'll let you know what it's like in a couple of days

Guinness is dispensed with a 70% to 30% Nitrogen to Carbon Dioxide mix. Nitrogen is not dissolvable in beer but it's bubbles are very fine giving that creamy finish to the beers served with it. The "Draught Cans" have a sphere of nitrogen which is released into the can when you crack it open. Guinness is very much maligned and a lot of it unjust as I find it a passable sup and it's really not that bad. It's just hard to taste anything when it's ice cold and giving you hand and brain freeze! That said there are much nicer stouts available than Guinness.
Planning - Not for a long while

Fermenting - I'm Done

Bottle Maturing - Hobgoblin, Fullers ESB, American Stout, TOP, Fullers London Porter, Bandini Black IPA

I brew one!

That said; I had a pint of Guinness in a pub I've never been in before, another town, and it was absolutely bloody lovely! Wasn't cold either. Perhaps ye onto something there? I don't know where this idea about a pint glass of black, dry ice came from anyway.

Think your right there Ditch .I keep my beer in the cellar but find if I bring them up to the warm for a few hours I get more body ,better head and more flavour.I don,t mean I drink it warm just not cellar cold.

I found edme irish stout made with 1kg BKE was a lovely stouty pint , quite thick and a good head too. In my opinion all ales, beers and stouts should be drunk at just below room temp id guess at 14 degrees C any colder and you cant really taste the beer. I tried Coopers stout with 1KG medium spraymalt and 500g muscovado sugar and to be honest i wasnt that impressed when compared to the EDME (maybe it was the extra sugar i put in)

EDME everytime for me now

Widely accepted cellar temp is 13 deg C for real ale, but I'd agree a little warmer is a good thing.

Guinness Foreign Extra Stout, knocks the normal stuff into a cocked hat, nearly as good as coopers with DSM
