Brewers Choice Bavarian Wit "Cidery"

Had this brew in seconday (bottles) for 4 weeks now.

Opened a bottle yesterday and its a great colour but very cidery tasting - i wouldnt say its vinegary though.

I had to finisht he fermentation next to the radiator as it only went down to 1.020. Even so the thermometer said it was at 20 degrees.

Is it the fact it was next to the radiator that's caused this? Will it mellow with time?

The yest used was the brewerm blanche yeast. Recommended temp is early 20's. So im a little confused as to whats going on!

Sound like Acetaldehyde, its a precursor and metabolite of alcohol if found it is usually an indication the yeast is still active and will need are a few day to week to clean it up. It could be that its still fermenting in the bottle and dropping a couple of points.

also infection can produce some as they produce more alcohol so if the carbonation is getting more liver of the week this could be source

I went for extra light DME - this is the second time ive done this kit and that one stopped at 1.028!

Methinks the brewferm blanche yeast doesnt like my brewing conditions (though other kits have been ok).

The beer doesnt taste like vinegar - just like someones mixed a bottle of magners and hoegaarden together :(

Maybe it is my first infection?

Ive come to the conclusion that this is probably just flavour spoil due to excessive fermentation temperatures.

Ive put my bottles in the garage to condition out further. I'll try a bottle in 4 weeks.
