Fruit beers - Sweetening

Post by Mogwyth » Mon May 04, 2009 7:38 pm

Made some fruit beers using wheat beer as a base, the fruit flavour has tuned out ok, but they are not realy sweet enough for OH, could I use artificial sweeteners to improve them.

Oh and the strawberry has fermented out 1.000

Cheers

how have you made the fruit beers, i was thinking of doing that at some point? my plan was to brew up something like a wheat beer and then when it's fully fermented rack on to some fruit puree made from some cherries or raspberries with a campden tablet added to it.

i'd guess you could add some unfermentables to it such as lactose when you're making it as that will leave some residual sweetness.

That is what I did, without the camden tablet. Done one of strawberries and one raspberry.
