My bottled wheat beer has turned out a bit flat. Is it fair game to uncap the lot and re-prime it all with another dose of sugar or spray malt? Will that help carbonate it?

Probably not. 
Did you give it at least one week in the 'warm' before you chilled it? If not then get them out of the fridge and leave them for a week or so and hope. If you did leave them in the warm, how warm are you serving them now? If they're straight out of the fridge and flat I would try taking one out and leaving it for 45-50 minutes before you pour it and see if that improves it. Failing all else I'd put it down to experience and either drink it flat or mix it with lemonade.
