Secondary fermentation queries on my 1st brew

Evening all,

I know that once in a keg or bottles then I need 2-3 days in a warm place (which I plan to put in the same place as I primary fermented), but then it needs to be in a cool place for around 4 weeks. Does cool mean away from the radiators, or outside in a box in the shed? I wasn't sure what I should do bearing in mind the current weather.

Also I read somewhere that caster sugar or demerera sugars are better to used than normal granulated (I don't have any priming sugar this time round). Any views on this.

I carried out some research into this a few weeks ago as I was concerned about the low temps whilst conditioning my Wherry. The consensus I found was that it needs to be kept around 10-12C for a few weeks.

a shed is to hot in summer and to cold in winter as you say on nights like these. a spare room or some where with no heat in it is fine,but if its larger your making it will be a much better brew if kept realy cold..

caster sugar is only a finer granulated sugar so no different in taste demerara will give you a different hint to your brew that only your own personal taste can decide on.if i want to try something different i make up a 1 litre bottle from the brew with the addition in it hope this helps.
