I am making a Brewferm Diabolo kit, but am not impressed with the yeast from other Brewferm kits I've made. So I have harvested the yeast from the bottom of four bottles of Duvel to make a starter. The thing is the starter is a bit slow to get going. Is this a lager or ale yeast? I have kept it at 21C, but it needs to be lower if it's a lager yeast. The yeast is just sat on the bottom, even though I've roused it every day!

A lot of breweries who bottle condition use a different yeast in the bottle, one that drops out better and forms a solid sediment, so that might not be an ideal yeast to doe primary fermentation with. I have no idea whether this is actually what Duvel do, so don't take my word for it...

Duvel yeast in the bottle is not their primary yeast. Better take Belgian Strong Ale from Wyeast.
