i racked my fixby gold into secondry fermenter after 9 days primary, how long maximum can i leave it in the secondry before bottling, because im a bit pushed for time this week till saturday, will i need to gently stir it to rouse it for the priming sugars to work when i put them in

Is it possible to leave the beer in the initial fermenter for extended periods of time?

For instance Could i allow it 10 days as usual to ferment out then add filings and leave for say another 5 or 6 weeks before putting into a corni??

Reason i ask is ill be poping home for easter and wanted to get a brew on its way so when i come home for summer 8 weeks later i could put it in the corni bright and clear and force carbonate it.

There are others a lot wiser than me in this matter (so correct me if I'm wrong), but 5-6 weeks in the primary sounds quite long to me, what with all that expiring yeast you could end up with autolysis - nasty off flavours caused by exposure to dead yeast cells. It would be better to rack it off the yeast after 10 days into a clean, sanitised vessel (with airlock) that you can use as a secondary.

ok cool, i was just thinking leaving it in primary would cause less disturbance and open it to oxygen.

Do you think if i rack into a secondary after 10 days i could then leave it for a prolonged period of time, obviously sealed with an airlock.

I mainly want it as bright and clear as possible before putting in the corni as i intend to more the corni around a lot etc and so want as little sediment as possible in it.

The boys are right, leave in the secondary as long as you can resist. Transfer to corny and it will be clear as a bell. I personally am a bit of a yeasty boy, like a bit of a sludgy pint.

I use a corny as a 2ndary & dispense vessel under pressure. This is after-all what is done with real ale. As long as you use a good yeast that flocculates out well (safale/ muntons gold) the small sediment isn't a problem and can often be brawn off in the first 1/2pint at drinking time.
