My IPA the yeast was very active was keep coming out the air lock for 6days was sick of cleaning up all the time .

Having spent 30 days fannying around in the fermenter, I finally kegged my APA two days ago. I use a fermentation fridge and set it to 18.5c. After 2 weeks the SG was 1.018 and I needed to make way for my next brew, so took this one out. The temperature outside my fridge was probably around 16c which might explain why it took so long to get to a point where fermentation stopped.

Anyhow, I skimmed off all the floaty bits and put the little strainer bag on the end of the syphon tube and set off. It was still fairly murky looking.

A short while ago I thought I'd give it a try (one of the kegs I added isinglass finings to), and it is now virtually crystal clear, and has an wonderful hoppy aroma and taste.

This beer is ABSOLUTELY FANTASTIC!

Glad it's come out good. Looking forward to mine - just stuck the hops in for 2 - 3 days now that the FG seems to have stabilised at 1007 (target in instructions is 1008, so happy with that).

The instructions also suggest 20 - 24*c as the target temperature for optimum fermentation so maybe you had it at a slightly lower temperature that it liked Fuzzy? For 'west coast' yeast maybe it was like being moved from Baha Beach to Portland?

I was very wary of what the instructions said about the suggested fermentation temperature as it just seemed too high (risk of unwanted fruity esters). It's probably me that's wrong on this point - Youngs should know what they're doing on this point, you'd have thought. After all it took about 26 days for it to settle at an FG of 1.011 (OG was 1.052 giving me 5.4%, which is close enough to the 5.6% on the box). When I do this kit again I think I'll try fermenting it at a higher temperature (20c) to see what what difference it makes.
