Discuss making up beer kits - the simplest way to brew.

Just wondering if there was a good, straightforward, guide to modifying the kits to enhance them?
Stuff like the effect of different malt extracts instead of sugar, hopping - with what and how, and any other stuff.

an expensive one but, a good one is to get two, two can kits and make a brew using one can from each. shame is if it doesn't work out you have to make another one, unless you get yet another kit and mix the 3 up, or even another and 4, you get the idea!

Some ideas...
- Steeping some speciality grains (e.g. crystal malt, Carapils, chocolate malt)
- Dry hopping
- Trying different yeast strains
Next Up : Something for the summer
Primary : Nothing
Secondary / Conditioning : Nothing
Drinking : Mosaic IPA

Cheers all!
Its something to think about for a bit - the next kit is to be a Coopers Pale which my mate over in Oz tells me is fantastic, and not to be worried that it is cloudy! After that I think a bit of experimentation may be in order... though I really am jumping the gun, what with my first brew being a whole 24 hours into the process about now!!!

Its a pretty good kit the CPA. I would add 1kg of spraymalt and maybe 250g of dex.
Coopers brewery uses 10-15% sugar in their beers so if you want to clone them you need add some.
I've made a couple of nice beers using this kit. neither finished cloudy.
One i added 1.5kg of liquid malt extract and amarillo hops for flavour. aroma. Very nice.
The other was uber easy. Same as above but dumped 40g of cascade in just of the boil water and dumped it straight into the fermenter.
You could do the same with EKG or fuggles.
Then you start playing with spec grains and the fun starts!

I see you are another Adelaide resident - my mate wound up in your city, lives up in Brigewater - which amused me as it was just outside Stirling... as I also live just outside Stirling, just the wrong one
Did you stick the hops in right through fermentation, and then just loose em in the bottling? That would be nice and easy!
Just out of interest.... what would happen if they were dropped in the pressure barrel instead.....?

There are a few folks here (ag and kits) that dry hop in the pressure barrel with good results. I have only ever dry hopped in the latter stages of primary, I used East kent goldings (think summer lightening) and the aroma they added seemed to perk the beer up no end.
I'd put the hops into a loose sterilised bag to save them floating around in the beer, some folks add a sanitised shot glass to the bag to sink it.

I'd just add another vote for dry hopping; depending on the vigour of your fermentations you might benefit from another sachet of Nottingham (and for high-strength brews definitely). So long as you like them, darker beers from kits seem to do better than pale ones in my extremely limited experience. We once enhanced a 3kg stout kit with 10g of coriander and some orange peel at Christmas - that worked well. If you don'twant to waste a whole brew you can extract spices using a little vodka and then work out the dosing on a pint or two.

Dark beers tend to come out more in winter for me! I am planning probably 1 or 2 lightish brews in the hope of an Indian Summer, then I shall get a couple of dark brews on for the winter! The plan is to have both kegged up before December as we are off on a bit of a trip from the middle of the month for 4 weeks... should be nicely matured when we get back!
Something akin to a Dark Island and possibly a Heavy as well... that would do nicely for mid January I think! Just with I had an open fire and a dog... then it would be heaven

Bridgewater isnt too far away from me, i am in Mt Torrens which is also in the Adelaide Hills.
Hops i use in the boil i filter out with my highly specialised piece of equipment - the wire mesh kitchen strainer. When dry hopping i put the hops into a piece of old panty-hose that has been sanitised and tied up at both ends. I have hop ball for dry hopping in the keg but yet to try it.
