Yeah, I'm a bit bemused by this myself. I use VWP.

My concern with no-rinse sanitizers is why they're no-rinse. Does their concentration kill germs but not harm yeast? Or does their power quickly fade when exposed to air? Or what?

I'm just wary of consuming chemicals I don't know about.

Obviously I check exactly what sanitizer is used by each brewery whose beer I drink! Obviously.

Yes, that's exactly what I'm saying.

As a rule, I don't make up any solution I'm not going to use in the next 12 hours.

Jaoqua: The no-rinse sanitizers are only effective sanitizers at the concentrations they are supposed to be mixed at. When your beer goes in, they're diluted way past those levels, and are not effective. At the concentrations then remaining, they're effectively negligible.

Commercial brewers use far harsher chemicals than homebrewers, like caustic soda (actually, caustic soda is in VWP!), and peracetic acid.

Iodophor is very reliable, and a much better option for sanitizing fermenting vessels for general brewing. I tend to reserve chlorine based products for equipment i suspect has been infected, or has gotten really filthy.

Star-san is probably better all round, but a lot more expensive. It's also apparently true that you can drink it if you really want to. :)
