That question's never entered my head before, mate. Now ye ask though? What can I say? I'm just too old to give a fart about such nth degree levels of naval contemplation.
Tell ye one thing though? They've never yet been shown to poison even the most expensive and delicate fishes.But, they're sure as hell to be added to the list of potential carcinogens, sooner or later. But, then; So will beer ~ eventually

I am liking the sound of a fish tank heater, I would be able to move away from my mother-in-laws airing cupboard. Question is how does this work in practice, do you drill an extra hole in the fv and if so how to you stop infections from entering at this point.

Burgo; There's probably as many ways of attaching a fish tank heater 'stat to ye FV as there are thinking men who choose to adopt the method.
Yeppers;One way is to drill a hole through the FV lid ~ or simply use the hole often found ready made. Bugger - I found - with that way is that ye have to a) Take off the heaters plug. Pop the wire through. Put the plug back on. Then, b) Every time ye move that lid, ye have this damn heater dangling and swinging about beneath it! Believe me; It becomes hateful and that heater's just trying to get smashed against the floor!
What I'd advise then is just to drop the heater over the rim of the FV and pop the lid on top of it. No need to worry about trying to snap the lid down over the wire. But, if that little gap worries ye? Just drape a cloth, soaked in Sodium Met. over it. Or even smother the area with cling film.
Always remember; For donkeys years, we just slung a damp towel over the top of a five gallon bucket. No lid. No air lock. No problems!

you could always place the fermenter in a larger bucket/container with water in it, and add the heater to the bucket rather than the fermenter the heat will transfer into the fermenter over time, the advantage is you wouldn't need to worry about sanitsing the heater or if its food grade or not.

Del; Are you drinking what I'm drinking?! Frankly; I'd rather just get on than search about trying to find slightly larger buckets to put my FV's in and go to that bother. Equally, I find it no great hassle to spray down or dump my heaters in the bleach ~ dependent on what method grips me at that moment.

Just throwing some options out there for those of a paranoid disposition. Personally i have a temp controlled fridge for fermenting and i don't have first hand knowledge of the the logistics of using fish heaters TBH.
