Ok, Its day 7 for my IPA in the FV. I took a reading after 3 days and the gravity was down to 1016. I took a reading today and it has only moved down 2 points to 1014. The head has disappeared with just some small clusters of bubbles on top of the wort and there is still condensation on the lid of the FV. The brew itself has cleared quite a bit from when I took a sample on day 3, but there is still white bits floating about in todays sample. I take it this is normal and will clear further? I also tasted the sample and it does not taste bad.
I plan to leave it in the FV for a few more days and take another reading.
Is this reluctance to move towards 1010 due to using 1kg DME or does it just get very slow towards the end, and can I expect it to maybe finish above 1010?
I used Safale04 and plan to bottle this.
Coopers IPA
Most people I know who use Coopers kits here in Oz let it sit for 14 days. Let the yeast do all its work, including any diacetyl cleanup. I've made heaps of Coopers kits and do find it better when left for a few months to condition. Don't know why, just does. Just had to try a bottle of my Coopers IPA to see how it was progressing. Its just 3 weeks in the bottle (1 warm 2 cold) and it looks and tastes perfect (very clear with great carbonation and head). Can't see how it could get any better but it probably will in a few more weeks. Thanks everyone for the great advice. This result has restored my faith in homebrew after a not so good first brew. Now on to the Wherry.
