Blueberries :P, just the flash from my compact, and an opaque bucket. It is black as Stout should be.

Started my first coopers stout on 20th march.
Asked for 1kg of dark spray malt but when I got home I noticed I was given Dark malt extract.
Is this the same thing?
It started off like i Volcano, but has settled down now and should be ready for Half bottle & Half barrel in a few days.
Still wondering whether to use white or brown sugar for priming but I've got a couple of day left yet to make my mind up.
Thanks for all the great posts on this thread, as it's taught me a lot (I think).

Ditch - I know from your posts that you don't tend to prime your Stout. However, I plan to prime mine and I wonder whether you would consider using Brewing Sugar a sacrilege for priming purposes - I am using 1kg of DME for the brew.

You probably got band dried malt its just a different method same results :D As for priming either will do .Its such a small amount it wont effect the taste.Happy brewing :D

Hi,

Have brewed the Coopers Stout a couple of times now and it tatses great, but does not seem to keep its head. When it is poured from the top tap barrel it has a frothy head which disapears after a few minutes. I have brewed with 1Kg of dark spray malt and prime with about 80-90g of brewing sugar and make to about 20L, i try and leave for a few weeks but the same results both times.

Am i missing something to retain or get a nice head on this ?

i bottle all my brews so cant really help you but was wondering what sort of temperature you keep your barrel at?

Barrel has been in the shed and it has been over the last 4 months so temp has been pretty cold, normally try and keep them below 15deg but could have been a lot lower.

Sounds like it might be a bit cold in the shed. [-X If you like a few pints in the evening try pulling a few into a big 2ltr jug with lid on[you can get them from tesco called juice jugs] Bring it in to the house and let it warm up a bit then pour into your pot.You should get a nice head [-o< You cant beat good head :mrgreen:

Strange. Only 'problem' I ever have with my head is the patience required to go off and do something else for five minutes while the first half glass of foam dies back. Pouring a pint of my stuff is a labour of love.

That done, I can quite easily take an hour drining it. Never once had a problem with it losing its head.

I believe any taint of washing up liquid can destroy a beers head. Ever had the Fairy concentrate near ye glass? I'm guessing so. And then did ye rinse the hell out of it?

Just half bottled and half kegged my first coopers stout.
Had a little taste out of the keg and you were all right, It's bloody good stuff.
I'll try to be patient now and wait a couple of weeks at least, although I'm not promising anything.

Bottled mine last night, had half a pint left over so couldn't waste it :D not bad at all. Although for my taste I think next time I might make it to only 20 litres to give it a bit more body :twisted: Although I primed it with ultimate brown sugar Billington molasses unrefined cane sugar :D
