Haha

I need to pace myself, as I will be drinking my Coopers Extra Strong Vintage Ale from the keg and don't want to pass out before the turkey is done

I tried a bottle last night. Fantastic. I imagine the base Australian Pale Ale may be a little bland, but with cascade hops done three ways it was excellent.
Mrs_drummer said it had an elderflower hint to it, like a nice reffreshing summer ale

It's only been in the bottle a week but already lightly carbonated and almost clear

It is a great base kit :)

Coincidentally, I dug out my last bottle of APA from the garage last night, and really need to make some more
in January. I am top heavy with dark beers atm and plan to use up my left over 60g of Nelson Sauvin hops in it :D

It is Dark Beer Season, but I understand what you mean.

I really need to get something a bit lighter on. I have the kits, just not the time or space.

I think I might have added a little to much Nelson sauvin to my kit.It is drinkable but the citrus/floral taste is a little over powering for my palate.Think it might be one to leave for a while and see if it settles down.

Yeah, it is quite a lively hop.

I was planning to boil 5g and steep 10g and then maybe dry hop some too.

I think that its more suited to paler ales.

john,

wanting to try this over xmas whilst i'm off work. I have 100g vac bag of cascade hops but I will be using a pressure barrel instead.
when you say "20g cascade boiled 15 mins." is that the pale ale mixed with some water and the 20gr hops bolied for 15mins or just plain water and making a hop tea?

When I simmer hops I generally have some sugars in the water such as DME or honey to help extract the bitterness and flavours.

John

What fermentables did you use with this brew?

I am tempted to use up my last 60g of Cascade leaf hops with a tin of APA that I have in the cupboard, as I currently have 20L of APA hopped with Saaz & Nelson Sauvin hops sitting upstairs tasting like lime pickles from the local Indian restaurant

If it doesn't improve after another week it will be getting binned and I am thinking of knocking up your brew, so I can pretend that my first kit disaster never happened #-o

I have 500g of light DME and 500g of Coopers Brew Enhancer 1 (500g of BE1 equates to 300g of dextrose & 200g of maltodextrin) at my disposal as fermentables.

IIRC it was just a kilo of BKE, but I can't be certain. Whatever the kit recommended - not much help unless your can still has its instructions, I'm afraid

But I doubt if the fermentables you've got would do it any harm; I certainly won't be buying any more Coopers BKE at £6 a kilo!

Mornin folks,

Just bottled some cider and wine in peace(wife not present) and am in the mood to put on my Coopers APA.
Never done it before but I have the following possibles brewing sugar, light spray malt, medium spray malt, honey, light brown muscovado and some dark brown cane sugar.
Any suggestions welcome. Was going to brew 20 ltr as opposed to the 23 on the destructions.

Cheers
Phil
