A stop-and-go question

Post by zehnernet » Sat Jan 19, 2008 2:19 pm

Hi folks!

I've made kit. The first fermentimg works for 4 days and went from 1040 to 1012. In 4 days!
After these 4 days it didn't go further down. After 6 days I opened the fermenter, put some yeast-fit on top and stirred it gently.
But nothing happends until noe, day 7.

Two questions:

Is it OK than? The instruction leaflet says it has to go down to 1010.
Now, with trying to start the fermenting again and nothing happens I wonder, if there is enough sugar and/or yeast left for the second fermentation in the keg or in bittles. Is there anything to do to besure the second ferm will work in the bittle and/or the keg (I want to fill two big bottles and the rest in the keg)?

Thanks in advance!

1012 is near enough - about 4.2% ABV eventually.

I hope there's enough yeast left after 7 days as my muntons 3Kg kit is on day 13 and I'll probably bottle tomorrow.
I brew therefore I ... I .... forget

Agreed, 1012 is close enough to call it done. Once you have a stable reading for a couple of days I'd go ahead and bottle/barrel.

OK, thanks to you both!

Can u tell me something about my second question. If I bottle/keg it now, how can I be sure to produce enough Co2? Is the sugar I will add enough to do it? I have a Kingkeg, btw.

Or is there any other hint to make sure to have a well carbonited beer from the keg/bottle in a few week?

Thanks a lot!

If I keg, I don't bother priming at all. Leave it in a warm place for 5 days then move to cool area to condition for a few weeks before drinking.

When bottling I use half a teaspoon of sugar per 500ml bottle and use the same routine for conditioning.

I would just prime as normal, leave the barrel in the warm for 4-5 days then transfer it to the cool. Make sue the KK is sealed correctly they can be a bit tempremental, at least twice a year you need to change the rubber seals on the S30 valve and the 4'' washer on the screw top lid. 8)
