To Dump or not to Dump

Hi Guys

Have a batch of "customised kit" (+hops, OG upped to 1052 with DME) which was in primary using fermentis safeal S-04 ~20c. However went in yesterday (day 3) and found the fermenting bucket lid a couple of feet away from the bucket, and the beer exposed to the elements (my garage!). Very interesting spiral foam formations breaking through a crust - so must have been off a while! :oops:


Washed lid and replaced, and this morning no obvious nasties/colonies growing, primary subsiding, and beer tastest like, well nearly fermented beer. (no vinegar or other unfamiliar flavours - just bleedin hoppy! :shock: )

Should I carry on and bottle as long as all seems well at the end of primary, or just dump it? My only keg is full - so no quarantine secondary or easy option possible.

Also - can you fit a airlock to a fermenting bucket - I am guesing this is the sensible thing to do, and would allow for a blowoff tube etc - is there a standard way of doing this? (My DIY skills tend to go a bit awry without careful instruction).

I am hoping any nasty spores werent hop-heads and perished a bitter death! :twisted:

Never ever discard beer unless you are sure it is gone off to the point of being totally undrinkable :lol:

Leave it for the moment. Nothing may have fallen in before you found it and the CO2 blanket would have protected against oxidation. Did you sanitise the lid before replacing it ? It is possible to ferment in open tanks but not recommended unless you are trying for a lambic or farmhouse cider .

I have two fermenters with holes in the lids for airlocks or bungs and for certain brews and secondary fermentations I use one of these lids with a standard bubbler. For very vigirous ferments I leave the lid partially open for the first two days.

I have a small hole in the lid of one of my FV's and I simply tape cotton wool over it to allow the gasses to vent while stopping nasties (the crawling kind) to get in :D

I bought small gromit and small airlock ready to put in a secondary container for wine. But Id like to get the feedback you get from the bubbles when brewing my beer. Any reason I can't use this in the lid of a 5 gallon fermenting bucket for my beer?
