Changing beer during fermentation

I have an irish ale from a brewhouse in Australia and I was given no instructions(didnt know this until brew day-it consisted of a bag full of different ingredients + a seperate bag of hops-I just treated like an extract
Brought about 2 1/2 gallons of water to a steady boil and added the kit,after about 20 minutes(steeping) mixture started to foam so stirred until no more foam,added 1 can of hopped liquid malt,after 55 mins added the hops for 5 mins,cooled wort added to fermentor with strainer and added water upto 20 liters.SG =1038
pitched wyeast irish ale 1084.
started bubbling pretty quickly.
today I took reading and a taste test-
reading=1014
tasted like a dry tea,very bland,no flavour
I have since found out I should only simmer the bag for 10-15 minutes
So from that I`m guessing I screwed up,is there any way I can add extra mixture of grains,malt,hops to this with a new yeast and see what I come up with-My fermentor is 25 liters so I have 5 liters to play with.
Any suggestions?
