Brewing with different sugars

Im going to start a Tom Caxton's best bitter, i was thinking about trying to get a slightly different taste to the other bitters i have brewed.

What i am thinknig about is using demerera sugar instead of white sugar.

what is your opinion on using other sugars rather than regular white sugar.

i use that malt stuff rather than a whole bag of 1kg of sugar, i use the spray and about 1/2 kg of sugar

Yeah, be careful using any other "sugar" other than spraymalt.

Saying that, I did a bitter (see sig) using a mix of sugars and it tastes pretty good although I'm going to add hops to it as it's too sweet for my tastes.
