too much yeast?

Post by PeteH » Fri Apr 11, 2008 10:56 am

I started a wherry off on sunday, but rehydrated a Safale 04 instead of the kit yeast. Had to guess at the temp of the water to add it to cos I bust my thermometer, but it felt ok. 24 hours later nothing had happened, so I rehydrated 2 6g packs of kit yeast and addded some yeast vit and pitched. That got it going and it's had a good krausen (is that the word?) since tuesday. But, could using this much yeast cause any problems, or affect the taste in any bad way?
Cheers.

Cheers Daab. This was down to 1011 yesterday, which surprised me as I expected it to get stuck, and i think it says fg will be around 1014 in the instructions. So I boiled up 10 ginger and lemon tea bags in about 1/2 pint of water and added the strong tea to my other FV, repeated the process with the same bags, and then siphoned 10 litres of the wherry into the FV. A quick taste told me the lemon and ginger taste was very subtle, so I put the previously boiled bags into a boiled washing tablet bag and suspended it in the wort for a day. I removed it this morning so as not to risk an overpowering taste. I'll check the gravity today/tomorrow and probably bottle both Wherry versions on Wednesday.
