Hi,
First time trying Home Brew and using Nelson's Revenge Kit.
I have an immersion heater in the bin regulating the temperature between 21 and 25.
The brew seems to be fermenting ok.
However after 4-6 days I am due to transfer it to the Barrel and store warm for 2 days. Then leave to mature for 2 weeks + cool dark conditions til clears. I am hoping the garage is ok for this.
I do not have a heating belt.
The garage, where I am doing the brewing, seems to be staying at around 16 at night and 20-22 during day.
The house is much warmer 27-30.
Should I keep in the garage or house.
Or do I try and get a heating belt very quickly for the garage ?
Lastly they suggest 1/2 teaspoon of sugar per pint in Barrel when I transfer from Bin. Could I up that to 1 tsp per pint and get stronger beer without ipairing flavour and quality ?
Please advise.
Many thanks.

I too have started `a Nelsons brew last Sunday and as of today it is still going strong so it looks as if it will take at least another 10/15 days.
However I might be wrong in leaving it because as you say the instructions do say after 4/5 days. I am a complete learner and I would appreciate an experts advice as to whether or not to \leave the brew untill no further bubbles are seen.
Help appreciated

I had a few stuck fermentations when I used to do the kits - I found that it was usually down to the yeast that came with the kits. Not sure whether it was too old, or badly stored, but generally speaking I find that 5g of yeast is not enough to ferment a 5 Gallon batch. My problems cleared up when I started using 11g packets of Safale-04.
