Hi all.... I started the brew last Sunday (04/05/18) and the initial Hyd. reading was approx. 1040+... today (12/15/18) the brew is still producing bubbles and appears to be still fermenting... the Hyd. reading is approx 1010. The kit instructions tell you to keg or bottle after 4/5 days.
My concern is that the brew is still fermenting... now what should I do as the brew has been going for about eight days... should I keg it now or wait till no further bubbles appear. I reckon this brew ,if ok will blow my socks off.
Please help and advise.... Frederick

Hi Daab.... thank you for your reply and I note what you say. I had a look this morn and there are still many little islands of bubbles on the surface so I will leave for another day. Today is the 9 or 10 say so I think I will be ok for a couple of days yet... what do you think ? Just to be on the safe side when I do syphon into the Keg I may put a teaspoon of the yeast sediment in the keg hoping to kick start a secondary fermentation...that is unless you otherwise advise something else.

Hi Daab... boy you must be sitting there waiting for us to contact you... many thanks... Ok I will leave untill it has been 14 days and then I will transfer to the Keg. Mind you ... you have me worried regards an infection... I hope not but how will I tell... do I taste it even as it is ??

This is probably sacrilege to the brew kings but I have been brewing for approx 3/4 years on a very regular basis and have never used a hydrometer. I always leave for 10/12 days and then keg. Maybe I have just been lucky but so far so good. Certainly never kegged at 4/5 days.

You're not on your own, I've been brewing my own for the best part of 40 years and I would'nt know one end of a hydrometer from another - always gone on taste before and so far it hasn't let me down. :)
