The general rule of thumb is to ferment for ten days, undisturbed in the primary fermenter. Then, rack it to either bottles (primed with the required sugar to carbonate) or keg/barrel again using sugar to carbonate or you could you a forced gas system in the barrel so you don't need to wait for it to carbonate.
Which ever way you decide to go about it, you should leave it for at least four weeks to mature before the beer will be at it's best.
I and many others seem to only be able to wait a maximum of one to two weeks before "sampling" begins.
