Hi to you too!

Turbo Cider is an "Other Brew" topic rather than a kit one so your thread may get moved.

What a lot of questions!

Water and Turbo Cider? No, just apple juice, extra fermentables and yeast.

AJ sort? Juice or juice from concentrate - ensure it hasn't got additives, sweetners etc.

Have never made a batch larger than 5 ltrs but I do know the head can get quite violent - I'd leave yourself a good few inches of room.

Extra fermentables - work away! Sugar can thin the taste; honey can add flavour. Am thinking of maple syrup myself on my next batch. IMO to get an ABV in the 8% region you'll need an OG of approx 1.060ish.

Endsing fermentation is another variable. If you are bottling/kegging to get sparkling cider ensure the brew is still cloudy to a degree. This will mean there is still some yeast in suspension to work on the priming sugar.

If you want it still, leave it to clear before bottling.

The more juice you use the more apply it will be, you can use all juice as many plp do.

As for the strength for 8% go for a starting gravity of about 1.059 (assuming you ferment til 1.000, tc cider usually goes a little drier than this, so will prob be a little over 8%...), for this take the sg of the juice and see if you need to add any sugar (for tc i would use plain sugar and save anything else for beer). Add in small increments until you reach 1.059 (you can calculate how much to add - search the forums or google). Pitch your yeast and away you go...

Just looking at the size of your fermenter, it may be worth starting this a few litres short as it will foam quite a bit depending on the yeast, just calculate waht ratio of sugar to juice that made 1.059, then add this after a couple of days when the foam has subsided...

Good luck, just as a note, I find there is not much difference in price of tc and kit cider, with the kit being far superior (imo) - the john bull gets rave reviews

Ive just started some TC - 5 litre batch. Put 4lt into a 5lt water container with 500g of white granulated sugar. Starting OG was about 1.080 so hopefully will be about 10%. Cant wait been bubbling for a few days - i used half a pack of yeast so i guess it took a while for the yeast to get going. Just keep in nice and simple for your first go and you can add stuff to your next brew.

Drank 2 ltrs of my TC "Bumble" (it had honey in it) Tuesday night, using it to chase tumblers of Bells (don't ask - bad day).

Bumble is 11%. Bells is 40%.

Wednesday was not fun
