Hi Guys
I have just made a brew buddy cider. I used a kilo of granulated sugar and made it up to 20ltrs. It fermented out to 998 from 1045.
I put it in the cornie on day 8 and have force carbonated it over 4 days at 12 ish psi. The carbonation is spot on, I just tried a bit to see what the fizz was like.
It had a slightly eggy smell and was not really that full, quite dry but it really lacked in substance, a bit acidic and not that nice! It was not off, just not that good.
I appreciate that its still young, but how much do you think it will improve?
Will it increase in flavour/body/finish? also the colour was really pale, could this deepen?
Or have just made a crappy cider?
Thanks for any tips?
Matt
Brew Buddy Cider
The kit ciders do turn out very dry, lip-curlingly dry in some cases. Personally, I don't mind the dryness as I find commercial ciders too sweet. However, if that's what you are looking for, you will need to atrificially sweeten - as most commercial cider makers do.
You can add the non-fermentable sweetener intended for wines after fermentation, or just add some apple juice when serving.
The colour is unlikely to change, but the flavour will improve the longer you leave it. I try to avoid touching it for at least 2 months. However, it will always be dry unless you sweeten it.
The BrewBuddy cider does turn out a bit thin, I preferred the John Bull Cider kit. In any case, I would always recommend making them to 32 pints rather than 40, regardless of how much sugar you add.
Hope this helps.

Ditto, make them short for a better flavour and more body.sparky Paul wrote:The BrewBuddy cider does turn out a bit thin, I preferred the John Bull Cider kit. In any case, I would always recommend making them to 32 pints rather than 40, regardless of how much sugar you add.

The Samsons kits are also pretty good.
Check the Other Brews section for Hybrid TC concoctions as well (cider kit + apple juice).
