Woodfordes Nelsons Revenge

Hi all.... In the past I seem to remember that woodfordes kits are a bit reluctant to start fermenting etc.. I duly made up my third Revenge kit on 10/08/08 and made a starter ( half pint brew...6tbs. sugar and DMS). Within one hour the starter was going like the clappers so I added to the main brew (23degs). All this was at 11am and by 5pm there was furious activity in the FV. It is now seven days later and the brew is still fermenting well. By the second day the froth was almost lifting the top off the FV.
This also happpened with my two previous Revenge Kits and my greatest difficulty is that the brew seems to go on fermenting for at least 10/14 days.
I must say I am delighted with Nelsons but am a bit worried as to how long to leave the brew in the FV before kegging it..... any ideas???

Sorry all.... I MUST add that in my previous Nelson brews they finished at about 1010... clear as a bell at 21days and would blow your socks off

Sounds like a healthy fermentation, Frederick. What temperature is the fermentation taking place at?

Hi Maxashton... not really sure... the kit is out in the shed... I have a heater in set at about 21/22 deg. but other than that it relies on ambient temp and I know the shed does get rather hot with the sun on it.

I think the length of time it is taking to ferment out is pretty irrelevant. I'd just check with a hydrometer every other day until it's near where it should be finishing.

If it's around 1010 and still appears to be fermenting, I'd rack it off into a secondary, this normally sorts it out. I don't like my bears getting too low and dry. Leave it in the secondary for another week until the reading is stable for a couple of days.
