Diabolo, going like a train.
Settled on a Brewferm Diabolo from their 8% abv range and put it together last friday with 500 grms clear candy sugar and 100 grms brewing sugar. I`ve managed to keep the temperature at a pretty steady 20-21 degrees. Four days later and I`ve just taken a second hydro reading and its dropped from 1070 to 1016. Wow!
My first Brewferm got bottled at 1016 and it`s a corker. I used the kit yeast as well which is a first for me and that was only because the T 58 I ordered was out of date when I checked it ( bit naughty of the suppliers ). I reckon its around 7% alc already, how far do you reckon it could go?

with the sugar youve used a bit further id say, prob down to 1008.
The brewferm kits are the dogs danglies, they seem to put the right stuff in a can and you dont have to fart about with it anymore.
Ive made the Grand Cru, Diabolo, Tarweibier and the Ambiorix and all are cracking. The ambiorix took on a real complexity after about the 3 month stage - well worth the wait.
Oh, and ive a tripel about to be put on for xmas

If this one turns out as good as I expect I`ll do a 2 can kit next time as 9 litres isnt going to last at all. This was going to be for Xmas but I`ll have it bottled next week and even with 2 months conditioning I reckon it`ll be gone by early December.
How would you compare it with the other Brewferms? I picked this one after reading their own descriptions and it said " a slight sweetness ". I don`t like some of the Belgian beers as they have too much sweet aftertaste for me. Even the Leffe blonde which people seem to rave about leaves a slight sickly taste and one is enough. Gimberger blonde, which is on offer at a certain large supermarket chain at the moment is a much cleaner tasting beer to me and is the same abv as Leffe. I`m drinking a fair amount of that at the moment, purely to re-use the bottles of course.

I recently did 2 x Diablo kits but they got stuck at 1.020. I thought that would taste too sweet so I tried rousing which did nowt. Adding a yeast started failed to get it going so I was forced to add a sachet of DBE. It finished at 1.001! Geez it's powerful stuff. 3 500ml PET and I've got a fuzzer the next morning. It tastes so strong that it overpowers the beer a bit. Maybe a lesson learned!
Christ Raj, did you just use sugar in it. ? They must be the only kits that actually benefit from using just sugar. I only added a sprinkling of yeast vit to mine and I`m quite shocked at how its progressing. If I`d known I would have maybe gone up to 10 litres and still had a premium strength beer.
I tend to see this as brewferms answer to a duvel (diabolo = devil, duvel = devil in differing languages i forget which), so what your after is a light blond ass kicking belgian.JayBee wrote: How would you compare it with the other Brewferms? The Grand Cru is a different beast altogether - a high strength wheat beer akin to Schnieders Aventinus, although i seem to be the only one who has brewed it to the same colour!
as for Jaybee using malt extract, lesson learned im afraid. as i said earlier the brewferm kits are best left well alone, and apart from adding the brewmasters extra (in my case normally 300-400g) they should be left well alone, they are a bit like wheat beer kits, they rely heavily on what is in the can and if farted about with you end up with something completely different. White sugar all the way with brewferm, whether its candy or table.

I looked at the Gold and it seemed a bit more of a summer/hot weather type drink, one I`m sure to try though. The Gallia I`m drinking now is 5.5 as well and very good, kind of a lighter version of Leffe but not as sweet. I can see me working my way through the Brewferm kits as they sure are a doddle to do.
I`ve developed a real taste for the Belgian ales quite late in life after going on a work trip there in June, the choice is staggering. If you ever get a chance to try a Corsendonk Agnus you`ll know what people mean about a taste of paradise, seek and enjoy.
