32pints...40pints...??pints

ok so when using a kit it says you can either make it at 40 pints (normal strenth) or cut down the water content and make it 32 pints (strong strenth) what would happen if you use more than 40 pints? say 48 pints (the difference between 32 and 40) would you end up with a watery brew or will it taste ok but be weaker in strenth? anyone any ideas?

Yup, more water, lower ABV, less water, higher ABV.

to a certain degree, it will be less bitter, less malty and have a more watery mouthfeel.
