Fermentation finished at 1008

Started my Coopers 14 days ago. Took a hydrometer reading on Thursday (1008)
Taken a reading today and still 1008.
Can I bottle even at this reading? My target reading is supposed to be 1006

That'll be fine. The rule is 2 (or 3) successive steady readings in the ballpark of the expected FG. You'll rarely get the FG spot on, as it's affected by several factors.

I just finished a Coopers Bitter kit with beer enhancer for xmas. Only went down to 1.010 steady for 3 days.

I'm not bothered, when i kegged it it was nice and almost clear and tasted fine. A coopers lager kit i started 2 days after this bitter is already below 1.010, just the nature of the beast.
