brewing temperatures

Post by andywood » Fri Nov 14, 2008 7:17 pm

sorry if this has been posted before, i did a search but couldnt find anything

doing my first home brew for a very long time this week, started it off on Sunday.

Now after a couple of days I decided that i needed some kind of heater as the room temperature was 14-18C generally (occasionally creeping above 20 late evening). After the heater had been on for a day I came home to find the mixture bubbling away quite intensly but with a high temperature, in the upper 20's. The smell from the brew is quite tremendous as well, smells very alcoholic. OG was 1.058 and it is now 1.008 with a few bubbles still coming out.

How will this temperature affect my beer? Im brewing a Tom Claxton's Real Ale kit.

Thanks

High fermentation temperatures can produce an off flavour in the beer. I've heard it described as being like 'banana', but to me it tastes more like a harsh bitterness.
