Beer in the presure barrel

Hello again everyone my beer is coming along nicely now. Took a little sample yesterday and it is starting to clear very nicely. To me the beer seems like it is almost ready. It had a week in the FV and i'll be leaving it until friday until i start to drink it. basicly two weeks from the start until i start drinking. Will it really make a huge difference if i leave it another 2-3 weeks. If it does make a huge difference will it continue to inprove even if i am taking beer out and drinking it? I'm sure i won't drink it all in a few days (haha). I will add CO2 to to barrel every time i take some out. What do you guys think?

the beer will undoubtedly improve with age, particularly if you leave it a couple more weeks. if you drink it when you intend to then it won't have cleared properly and will probably be a bit of a waste, leave it longer but yes it will continue to improve after you've started to drink from it.

I've just started to drink a brew that I kegged on the 5th December and it will be much better if you can leave it a bit longer. You will be rewarded.
You don't need to keep adding CO2 unless you are unable to dispense otherwise you'll be just wasting your gas since the S30 valve is designed to allow out excess pressure over 9psi.

If you leave it longer to mature it will almost certainly taste better. But if it tastes nice anyway then personally I'd be too impatient to wait. :D
