I have a brewferm diabolo on the go, its OG was about 1065 (maybe 1070) I can't remember fully. Anyway its been fermenting nicely but has stabilised at 1018 for the last few days.
I don't know whether to give it a rouse to try to get to 1010 per instructions or whether in peoples opinions this is unrealistic? I guess no harm in rousing and then bottling even if nothing happens but I am hoping for someone else who has been here?

If your SG is about right then you have something that is now sat at about 6.1%
Dont worry too much about what the instructions state it should drop to, its only a very rough figure so you have SOME idea of where it will end. So long as you have followed 2 rules of thumb you can get it bottled or kegged. 1) if its been at least 10 days in the FV. and 2) you have a consistent reading over 24 hours. I reckon its good and ready so get it bottled up.

I would think it could be a little sweet (but not OTT) with the remaining sugars. Try it, if it is sweet it still has too much unfermented sugar. If you want to get rid of those sugars you have a couple of choices 1. Give the yeast a careful stir to try and set it off again and 2. Pop into your local HB shop or Wilkos and pick up some Dry Beer Enzyme. This will ferment the other normally un-fermentable sugars which will raise the ABV but will also make it a drier beer.

I gave it a gentle stir and added some more yeast nutrient, so hopefully that will do the trick.

My Diabolo dropped to 1014 after a rouse which I reckon is about right if made up as per instructions. It took a lot of patience during conditioning though, I made it for Xmas but its getting to be really good around now. Another month or so & it should be perfect.
