Really strong brew

I've only just started brewing and after a couple of succesfull kits me and my mate are having a bet on who can make the strongest beer.
Ive been given a samson strong ale kit and am thinking of putting champagne yeast in it and lowering the water content. Does this sound like it might work? Any suggestions from the more experienced on here would be greatly appreciated as ive got 20 quid riding on this bet. :lol:

Yeah, that's a sure way to get silly strong ale. Drop the water content and even add more sugar as your intending to use champagne yeast. You could even add Dry Beer Enzyme which will ferment it even more but will result in a very dry tasting beer but I doubt that your too worried about that :wink:

That looks like a proper yeast, have you tried it in a beer?

I wouldn't want to...but i suppose its feasible, I don't know the ins & outs of such a yeast.

I hear you need something like 8KG of sugar though...

DMH, just let the other guy win the bet and make a really fckin orrible undrinkably strong brew and waste his kit while you sit there laughin with a nice pint made from your kit!! :twisted:

If its about strength then make a spirit with the yeast Benson linked to but why waste a perfectly good beer kit, itll taste awful im sure............

I made a special brew a few years ago, I was bored one afternoon and decided to make the strongest beer I could, I used Loads of malt extract and loads of sugar and I just used beer yeast S-04. I got the gravity down to 1020, I was talking to my local micro brewery and told them what I was doing, they told me to add some more sugar and then add some wine yeast, this would bring it down to a FG of 1010, it all worked beautifully, the beer cleared, I let it mature for a few months, it was horrible :-& , even after a year its was naff, I used it as drain cleaner in the end. Best bet would be give him the £20 and save your malt and sugar for better things.

My advice would be, is make your kit as per instruction that came with it, but replace sugar with a beer kit enhancer or even better just DSM. Those Sampson kits are plenty strong enough any way. I think if you make 40 pints they are about 4.2 abv

If my mates are over, i charge them for my glass pouring service, not for the homebrew itself :lol:
