Rapid Fermentation

Post by Invicta » Mon Feb 02, 2009 12:56 pm

Hi Folks
I started a Brewpaks Fixby Gold last Wednesday evening. By Thursday lunchtime the fermenting yeast was blowing off the airlock, froth everywhere and threatening to blow the top of the fermenting bin. This ceased by Friday morning and reverted to a gurgle in the lock every 10 mins or so. The gravity has sat at 1020 for 24 hours. Any suggestions?

What temperature is it in the room where you are fermenting?

I have an immersion heater in the primary fermenter maintaining 20 deg. The room does not get above this.

Give it a bit longer in the FV. I would suggest giving it 7 days, then check the gravity, if it's still at 1020 your looking at stirring the yeast back into suspension, re-pitching more yeast or adding dry beer enzyme to bring the gravity down.

Thanks for that. I'll give it a while longer and if no luck then re-pitch.
