I have only had 2 brews in my corneys so far and was wondering if I had been doing it right?
After the beer has finished fermenting I rack to a secondary and add finnings, leave for 48 hours then rack to corney and force carbonate then drink straight away.
Should I actually leave it to condition like a bottled brew or does the finnings aid this?
Beer in Corney
Re: Beer in Corney
It's worth conditioning it for at least a few weeks in the corny. The flavours will mature and it will take the "harsh edge" off the taste. Depending on the beer style it will continue to improve for weeks or months. The only way I manage to leave it long enough to mature is to brew more than I can drink! Currently got 3 cornies maturing and a batch of stout in the FV. The lager corny is in severe danger of being cracked open, despite me intending to lager it for another couple of months.
Re: Beer in Corney
mdex,
the time spent in the secondary in my opinion depends on the yeast used. A high flocculating yeast requires less time than a low one. Either way, the clearer the beer the better. I am only starting out with cornie kegs and I secondary for around 1 week using liquid yeasts. (the last couple of days in the cold garage) some do not bother with a secondary, which is probably ok with high flocculating yeasts. I think a secondary is good for dry hop also. I would imagine that you are using a fairly high flocculating yeast with kit brewing, so no secondary required. Just leave it in the primary for 10 days and rack into the keg. It's down to personal taste really. I like my beer crystal clear.
