I started this kit last Sunday (26th Nov) using Muntons spraymalt light to replace the recommended 1kg of sugar and after the initial burst of fermentation activity, it's now at 1012 having been steadily dropping by one point every day for the last four days. Even though it's still slowly fermenting it is very clear and bright.
Is it normal for a beer to be clear and bright while still in primary?

I didn't think that anything was wrong, quite the opposite really.
Seeing as it's been fermenting at a slow pace for the last 4/5 days do you think it would be worth adding yeast nutrient at this stage to help the brew ferment out?
I have a tub of Young's yeast food & heading compound but I'm not 100% sure at which stage to add it or if it is needed at all.

Barrelled this brew on 9th December and by Chrimbo it only just resembled beer, not tasting too clever at all. Two weeks later, a total of four weeks in the barrel, and there was a vast improvement. Not quite the quality that I expected but it's fast becoming drinkable with a nice thick head to start with that disappears as it goes down the glass. I'm not sure if it's just me but I've noticed that for some reason the flavour changes for the worse if left to stand so I've come to the decision that's it's best drunk quickly, soon after pouring.
Sorry for waffling on but I've had to quickly drink 4 pints in about 30mins and my brains turned to mash and my eyes feel like they belong to someone that needs glasses!




couldn't help but notice that you have a wherry and the coopers on tap. Maybe the wherry is so dam good it's influenced your decision about the coopers
i did the coopers draught not to long ago with brewing sugar and i thought it was a good kit, not on the same level as the wherry but that's to be expected

Despite coming from and living in the land of Coopers, I would never follow any of there instructions that come with the beer kit.
My views
Replacing the sugar with the malt is a very good move.
The coopers yeast is always an ale yeast and so likes to ferment at a min of 18degC and up to about 24/26degC.
Add extra hops for flavour and aroma.
Leave for at least 2 months in the bottle/keg.
Serve icy cold!
all of coopers beers are served at or below 4degC except the stouts.
My fave coopers draught recipe is with 1.5kg coopers liquid pale malt, 12 g of cascade or pride of ringwood hops, steeped for 10 mins. I also generally pitch a starter from 2 750mL bottles of the Coopers Pale Ale.

I'm planning on doing a Coopers draught for my next kit.
I don't want to use sugar in it but I can't get hold of any spraymalt straight away so how much water could I add to make it around 3.6%?
I've got sme northern brewer pellets that I want to use, could I pep this up a bit with them?

If you used 20L of water you would end up with 3.4%. The OG will be 1.028.
As Daab said, this is a reasonably bitter kit already and reducing the volume will only increase the bitterness so i would only add the hops for flavour and aroma. So either steep in boiling water or boil for up to 10 mins but no longer. Dry hopping would probably also be a good thing.
Are you going for a low alc % for a reason?
