Candy sugar problem

Hi,
Just started 2 x Brewferm Abdij together, and decided to take the breferm advice and use candy sugar which i made following a recipe i found somewhere.
Trouble is that as i was aerating the hot wort before i added my cold water, i could tell pretty much all of the candy sugar had joined together in a big mass of sticky syrup. When i measued the OG it only came to 1060, whereas brewferm say its 1070, and the candy sugar should push that up shouldn't it?

It has set off bubbling like mad - so is fermenting well.... will the yeast be able to break down that much syrup?
Is the OG low looking because the syrup obviously didnt get suspended in the water?
Will it work out alright u think?

Your gravity readings were probably correct, the sugar displaces the wort to give you your reading. You could always add more sugar (clean a jug, add a few hundred grams of T+L, boil in the microwave, cool then add to the FV). Personally, I'd leave it alone and make do with ~ 6% abv and adjust it the next time you make it. If the fermentation stops short, which it may if it can't eat that clumped together sugar, then rousing the yeast should be the way to go.

I don't think so. I made a brewferm recently and disolved the candi-sugar in a pan before adding. OG was 1072. I expect the OG was low due to the sugar not having dissolved at the time. Maybe what was in there (but not showing on the gravity reading will disolve and be used by the yeast (as I suspect will happen) so leave alone.

Thanks very much - I'm going to persevere with it I think, but the gas has slowed down loads since yesterday.

Forgive my ignorance, how do i rouse the yeast?

sanitize tour brewing paddle/long spoon whatever and gently stir the yeast off the bottom of the fv.
dont go splashing around tho` else youll end up oxidising the brew.[bad]
