Would adding more sugar to the barrell in the 2nd week of secondary ferm change the taste at all? Or would it simply make more C02?

I hadn't thought that far ahead to be quite honest.
I guess it was a hypothetical question and i hadn't thought of quantities.
I guess it's easier for me to rephrase as "What amount of sugar/honey/<insert random sweetening agent here> would change the flavour and how much would create too much pressure?"
Furthermore, is this wise at all?

When would be the best time to inject the gas? Tomorrow its going to be worked pretty hard as its my engagment party so i expect at least 1/3 to be drank.
Right now im frightened of cracking the barrel as it injects the whole cartridge in one go. Would it just fill it with as much as needed then the rest bleed off out the valve?

If there is a pressure release valve, it will just vent the excess CO2
However, there should be enough pressure in the keg to release the beer naturally without the need to add extra CO2 at first. It's only as the barrel gradually empties that you should need to top up.
To be honest when I used to use this kind of set up I only topped up with CO2 when the flow rate dropped from the tap or just before I was going to draw a pint when it was getting empty!

I agree with DaaB here, it sounds like the party will make a serious dent in the contents of the keg so to avoid pints of froth I'd let gravity do the dispensing for you and loosen the cap. When you've all done then do the cap up and purge with CO2. The keg has presumably got 40 pints ish in it which won't go far at a party (if it's good!
