Whole packet yeast?

Hi,

I have just started brewing again after a few years. I started with a woodforde's nelson revenge kit.
I used the yeast which came with the kit. I have been reading some of the excellent posts on this forum and bought a few emergency sachets of yeast. I purchased Safale S-04 (English Ale Yeast) & Danstar Nottingham Yeast. Both arrived today but they are 11g sachets. I'm pretty sure the kit sachet was smaller.
In future if I substituted the kit yeast for one of these others do i put the whole 11g packet in?

Does anyone have a preffered yeast choice?

I am nearly ready to start my next kit. Because the woodforde's went well I was going to do another, but after reading some posts about stuck fermentation, i thought I'd ask the experts (you!) what the next kit I should get is? I've read on here the coopers kits are meant to be a cut above?

Any advice is appreciated

Having done two Woodfordes kits (made by Muntons) a wherry and a great eastern I had no problems with either and both were really good beers.

Last week I put on a "Muntons brand name kit" the Midas Touch and had stuck fermentation although I think I've got it going again now fingers crossed!

Great, thanks for the reply.
I think next time I will pitch in the Safale S-04 and see if it makes a difference.

Any idea what kit i should attempt next?

Yes, although the 6g pack supplied with Muntons (and most) kits 'will do', 11.5g is closer to the correct pitching rate, it's slightly inexcess of it but that's not a problem, once opened the yeast doesn't keep as well as it does in it's sealed, nitrogen flushed packet.

SO4 is a very good dried yeast.

I hear Safale SO4 is reputedly a Whitbread strain, is this so Chris?

I heartily second the Brupaks Brewer's Choice recommendation - I've done a couple of the best bitter kits with 500g brewing sugar and 500g light spray malt. I've got another two on order from my LHBS - I'll probably give the dark spray malt a go :D
